Ingredients
  

  • 2 medium sweet potatoes, peeled & diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes (optional)
  • Salt & black pepper to taste
  • Fresh parsley or basil for garnish
  • Grated Parmesan (optional, for serving)

Instructions
 

  • Heat olive oil in a large soup pot over medium heat.
  • Add onion, garlic, carrots, and celery. Sauté until softened (5–7 minutes).
  • Stir in sweet potatoes, oregano, basil, and red pepper flakes. Cook for 2 minutes.
  • Add diced tomatoes and vegetable broth. Bring to a boil.
  • Reduce heat, cover, and simmer for 25–30 minutes until sweet potatoes are tender.
  • Use an immersion blender to partially blend the soup (leave some chunks for texture).
  • Season with salt and pepper.
  • Garnish with fresh parsley or basil, and serve with Parmesan if desired.

Notes

  • For extra richness, stir in a splash of cream before serving.
  • To make it vegan, skip the Parmesan or use a dairy-free alternative.
  • Excellent with crusty bread, focaccia, or garlic toast.
  • Can be stored in the fridge for up to 3 days; freezes well for up to 2 months.
