- 1 large onion, finely diced
- 2 garlic cloves, minced
- 2 eggs, lightly beaten
- ½ cup flour or breadcrumbs (for binding)
- ½ cup diced bacon (optional)
- 1 cup shredded cheese (optional)
- 2 tbsp fresh parsley or dill, chopped
- 2 tbsp olive oil or melted butter

Prep Potatoes: Peel and grate potatoes. Pat dry with a towel to remove excess moisture.
Mix Base: In a large bowl, combine potatoes, onion, garlic, eggs, flour/breadcrumbs, herbs, salt, and pepper. Add bacon or cheese if desired.
