Ingredients
  

  • 4 large starchy potatoes (Russet or Yukon Gold)
  • 1 large onion, finely diced
  • 2 garlic cloves, minced
  • 2 eggs, lightly beaten
  • ½ cup flour or breadcrumbs (for binding)
  • ½ cup diced bacon (optional)
  • 1 cup shredded cheese (optional)
  • 2 tbsp fresh parsley or dill, chopped
  • 2 tbsp olive oil or melted butter
  • Salt and pepper to taste

Instructions
 

  • Prep Potatoes: Peel and grate potatoes. Pat dry with a towel to remove excess moisture.
  • Mix Base: In a large bowl, combine potatoes, onion, garlic, eggs, flour/breadcrumbs, herbs, salt, and pepper. Add bacon or cheese if desired.
  • Prepare Dish: Grease a baking dish with olive oil or butter. Spread mixture evenly into the dish.
  • Bake: Bake at 375°F (190°C) for 35–40 minutes until golden and crisp on top.
  • Cool & Slice: Let cake rest for 10 minutes before slicing to allow flavors to settle.
  • Serve: Garnish with fresh herbs and serve warm.

  • For vegetarian version, omit bacon and add extra herbs or cheese.
