Ingredients
  

  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • ½ tsp dried basil
  • Salt & pepper to taste
  • 1 package (9 oz) cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach
  • Optional: ½ cup heavy cream or cream cheese
  • Optional: grated parmesan for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Brown sausage until cooked through. Add onion and garlic; sauté until fragrant.
  • Stir in carrots and celery. Cook for 5 minutes until slightly softened.
  • Add chicken broth, diced tomatoes, Italian seasoning, basil, salt, and pepper. Simmer for 10–15 minutes.
  • Stir in tortellini and cook according to package directions (usually 3–5 minutes).
  • Add spinach and stir until wilted.
  • Optional: Stir in cream or cream cheese for a creamy version.
  • Ladle into bowls and garnish with parmesan and fresh herbs.
