Ingredients
  

Rolls

  • 12 sheets phyllo pastry
  • 1 cup crumbled feta cheese
  • ½ cup ricotta cheese (optional for creaminess)
  • 2 tbsp fresh herbs (dill, parsley, or mint), chopped
  • 1 garlic clove, minced
  • 1 tsp lemon zest
  • 3 tbsp olive oil (for brushing)
  • Black pepper to taste

Chili Honey

  • ½ cup honey
  • 1 tsp chili flakes (or fresh chili slices)
  • 1 tsp olive oil

Instructions
 

  • Preheat oven: Set oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Prepare filling: In a bowl, mix feta, ricotta, herbs, garlic, lemon zest, and black pepper until combined.
  • Layer phyllo: Place one sheet of phyllo on a flat surface, brush lightly with olive oil, and stack another sheet on top.
  • Add filling: Spoon 1–2 tbsp of cheese mixture near one end of the phyllo.
  • Roll tightly: Fold sides inward and roll into a cigar shape. Place seam-side down on the baking sheet. Repeat with remaining sheets.
  • Bake: Brush rolls with olive oil and bake for 20–25 minutes until crisp and golden.
  • Prepare chili honey: Warm honey with chili flakes and olive oil in a small saucepan.
  • Finish: Drizzle chili honey over baked rolls before serving.
