  • 1 lb sirloin or ribeye steak (thinly sliced)

  • 4 cups beef broth

  • Salt & black pepper to taste
  • 1 cup heavy cream or half-and-half
  • 2 cups shredded provolone or mozzarella cheese

Instructions
 

  • Sear Beef: Heat oil in a large pot. Sear beef slices until browned. Remove and set aside.
  • Sauté Vegetables: In the same pot, cook onions, peppers, and garlic until softened and fragrant.
  • Add Broth & Seasonings: Pour in beef broth, Worcestershire sauce, paprika, salt, and pepper. Simmer for 15 minutes.
  • Return Beef: Add seared beef back to the pot. Simmer until tender.
  • Add Cream & Cheese: Stir in cream. Gradually add shredded cheese, stirring constantly until melted into a smooth broth.
