Ingredients
  

Protein:

  • 4 bone-in chicken thighs (or breasts/drumsticks)

Vegetables:

  • 2 medium potatoes, cubed
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 red onion, wedges
  • 1 bell pepper, strips

Flavor Base:

  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • Juice of 1 lemon

Seasonings:

  • 1 tsp oregano
  • ½ tsp thyme
  • ½ tsp paprika
  • Salt & pepper to taste

  • ½ cup crumbled feta cheese

Instructions
 

  • Preheat Oven Preheat oven to 400°F (200°C) for high roasting heat.
  • Prepare Chicken Marinade In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper. Coat chicken evenly and let marinate for 15–30 minutes.
  • Prep Vegetables Chop potatoes, zucchini, bell peppers, onions, and tomatoes into even sizes. Toss with olive oil, salt, pepper, and herbs.
  • Assemble the Dish Arrange chicken and vegetables on a large baking dish or sheet pan. Spread evenly to ensure proper roasting.
  • Bake Roast for 35–40 minutes until chicken reaches 165°F (74°C) internally and vegetables are tender.
  • Finish & Serve (40 words) Top with fresh herbs, feta, or lemon zest. Serve hot.
