Equipment

  • Mixing bowl
  • Baking tray
  • Biscuit cutter or glass
  • Parchment paper

Ingredients

  • 3 cups self-rising flour
  • 1 cup cold cream (full-fat preferred)
  • 1 cup lemonade (lightly carbonated)
  • Optional: 1 tsp vanilla, zest of 1 lemon, or ½ cup raisins/berries

Instructions

  • Preheat Oven Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  • Mix Ingredients In a large bowl, combine flour, cream, and lemonade. Stir gently until just combined. The dough should be soft and slightly sticky—avoid overmixing.
  • Shape the Dough Turn dough onto a floured surface. Pat into a rectangle about 1 inch thick. Handle gently to keep scones tender.
  • Cut the Scones Use a biscuit cutter or glass to cut rounds. Press straight down—avoid twisting, which can affect rise.
  • Bake Place scones on tray, close together for soft sides or spaced apart for crisp edges. Bake 15–18 minutes until golden.
  • Cool & Serve Cool slightly before serving. Enjoy warm with jam and cream.

Notes

  • Cold cream is key: Helps create a softer, fluffier crumb.
  • Do not overmix: Stir until just combined for tender texture.
  • Cut straight down: Avoid twisting the cutter to ensure even rise.
  • Bake close together: For soft sides, place scones touching; for crisp edges, space apart.
  • Storage: Keep in airtight container for 2 days or freeze up to 1 month.
