Ingredients

  • 2–3 lbs flanken-cut beef short ribs
  • ½ cup soy sauce
  • ¼ cup brown sugar or honey
  • 2 tbsp sesame oil
  • 4 garlic cloves, minced
  • 1 tbsp grated ginger

  • 1 tbsp sesame seeds
  • Optional: ½ grated Asian pear, 1 tbsp mirin, 1 tbsp gochujang

Instructions

  • Make the Marinade: In a bowl, mix soy sauce, sugar/honey, sesame oil, garlic, ginger, and green onions. Add optional ingredients if desired.
  • Marinate the Ribs: Place ribs in a container or bag. Pour marinade over and refrigerate for 2–24 hours.
  • Cook the Ribs:
Grill: Preheat to high. Grill ribs 3–5 minutes per side until caramelized.
Oven: Bake at 400°F (200°C) for 25–30 minutes, flipping halfway. Broil for 2–3 minutes to finish.
  • Garnish & Serve: Sprinkle with sesame seeds and extra green onions. Serve hot.

Notes

  • Flanken-cut ribs cook faster and absorb marinade better.
  • Marinating overnight enhances flavor and tenderness.
  • For a vegetarian twist, use portobello mushrooms.
  • Serve with steamed rice, kimchi, and lettuce wraps for a full Korean BBQ experience.
  • Freeze uncooked ribs in marinade for up to 2 months.
