Equipment

  • Large skillet or sauté pan
  • Cutting board & knife
  • Cheese grater
  • Measuring cups & spoons
  • Tongs or spatula
  • Pot for boiling pasta

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil or butter
  • 3–4 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • 2 cups chicken broth
  • 1 cup heavy cream (or milk/Greek yogurt for lighter version)
  • 1 cup freshly grated parmesan cheese
  • 8 oz pasta (penne, rotini, or spaghetti)
  • Optional: 1 cup spinach, ½ cup mushrooms, red pepper flakes, lemon zest

Instructions

  • Prep Chicken: Pound chicken to even thickness. Season with salt, pepper, garlic powder, and paprika.
  • Sear Chicken: Heat oil in skillet. Cook chicken 4–5 minutes per side until golden and cooked through. Remove and slice.
  • Sauté Garlic: In same pan, add butter and garlic. Sauté until fragrant (don’t burn!).
  • Build Sauce: Add broth and cream. Simmer 5 minutes. Stir in parmesan off heat until smooth.
  • Cook Pasta: Boil pasta in salted water or broth. Reserve ½ cup pasta water.
  • Combine: Add pasta and chicken to sauce. Toss to coat. Use pasta water to adjust consistency.
  • Finish: Add optional veggies, garnish with parsley, chili flakes, or lemon zest. Serve hot.

Notes

  • Lighter Option: Use milk or Greek yogurt instead of cream.
  • Flavor Boost: Add lemon juice or white wine to brighten sauce.
  • Make-Ahead: Store sauce and pasta separately for best reheating.
  • Shortcut: Use rotisserie chicken to save time.
  • Dairy-Free: Substitute cashew cream and vegan parmesan.
  • Gluten-Free: Use GF pasta varieties like rice or lentil-based.
