Ingredients
  

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 cup almond flour
  • 2 tbsp honey (or maple syrup)
  • Zest of 1 medium lemon
  • 1–2 tbsp fresh lemon juice
  • ½ cup dried blueberries (or fresh, with adjustments)
  • Pinch of sea salt (optional, enhances flavor)

Instructions
 

  • Blend the base – Add cottage cheese to a food processor and blend until smooth and creamy.
  • Mix the dough – Add almond flour, lemon zest, lemon juice, honey, and sea salt. Blend until a thick, sticky dough forms.
  • Add fruit – Transfer dough to a mixing bowl. Stir in dried blueberries by hand.
  • Shape bites – Using a small cookie scoop or spoon, roll into 1-inch balls. Place on a parchment-lined tray.
  • Chill & set – Refrigerate for at least 30 minutes before serving.

  • Storage: Keep refrigerated in an airtight container for up to 5 days. Can be frozen for 1 month (thaw in fridge before eating).
  • Sweetness level: Adjust honey to taste—reduce for lower sugar or swap with stevia/monk fruit.
