Equipment

  • Mixing bowls
  • Hand or stand mixer
  • Baking sheet
  • Parchment paper
  • Kitchen torch (or broiler for caramelizing sugar)

Ingredients

Cookie Base:

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract

Custard-Inspired Flavor:

  • 2 tbsp cream or milk (optional)
  • 2 egg yolks (optional, for richness)

Topping:

  • ½ cup granulated sugar (for caramelized crust)

Optional Add-Ins:

  • ½ cup white chocolate chips
  • 1 tsp vanilla bean paste
  • ¼ cup brown sugar (for deeper flavor)

Instructions

  • Prepare the Dough Cream butter and sugar until light and fluffy. Add eggs, vanilla, and optional yolks or cream. Mix flour and salt separately, then combine with wet ingredients until dough forms. Chill dough for 30 minutes if needed.
  • Shape the Cookies Scoop evenly sized portions onto a parchment-lined baking sheet. Flatten slightly with your palm or spoon.
  • Bake the Cookies Bake at 350°F (175°C) for 12–14 minutes until edges are set but centers remain soft.
  • Cool the Cookies Allow cookies to cool completely before adding sugar topping.
  • Caramelize the Sugar Sprinkle an even, thin layer of granulated sugar on each cookie. Use a kitchen torch to caramelize until golden and crisp. Alternatively, place under broiler briefly, watching closely to avoid burning.

Notes

  • Chill dough if sticky to prevent spreading.
  • Bake until edges are set but centers remain soft.
  • Torch sugar just before serving for maximum crackle.
  • Store cookies in an airtight container for up to 3 days.
  • Re-crisp sugar topping with a quick torching before serving.
