Instructions
 

  • Prep Corn: If using fresh corn, cut kernels from cobs and scrape to collect the starchy “milk.”
  • Cook Base: Melt butter in a saucepan. Add onion if using, sauté until soft.
  • Add Corn: Stir in kernels and cook for 5–7 minutes until tender.
  • Make Sauce: Pour in cream or milk. Simmer gently. If thicker consistency is desired, whisk flour or cornstarch with a little milk and stir in.
  • Season: Add salt, pepper, and optional nutmeg or paprika. Stir until creamy.
  • Finish: Simmer for 5 more minutes until velvety.
  • Serve: Garnish with parsley or chives. Serve warm.
