Ingredients
  

  • 1 lb ground beef (or turkey/chicken)
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) beans (kidney or black), drained
  • 1 can (10 oz) cream of mushroom or cream of chicken soup
  • 2 cups shredded cheddar cheese (or Colby/pepper jack)
  • 1 bag (32 oz) frozen tater tots
  • 2 tbsp olive oil
  • Salt & black pepper to taste
  • Optional: ½ cup sliced jalapeños, olives, or green onions for garnish

Instructions
 

  • Brown beef: Heat olive oil in skillet. Cook ground beef with onion and garlic until browned. Drain excess grease.
  • Mix filling: Stir in corn, beans, cream soup, and seasonings. Combine well.
  • Layer casserole: Spread beef mixture evenly in greased baking dish. Sprinkle cheese over filling.
  • Top with tater tots: Arrange tots in a single layer on top.
  • Bake: Place in preheated oven at 375°F (190°C) for 35–40 minutes, until tots are golden and casserole is bubbly.
  • Rest: Let casserole sit for 10 minutes before serving for cleaner slices.
