Ingredients
  

Quesadillas:

  • 2 cups cooked chicken (shredded breast or rotisserie)
  • 8 slices deli ham, thinly sliced
  • 1 cup Swiss cheese (or Gruyère), shredded
  • 8 medium flour tortillas
  • 2 tbsp butter or oil for cooking

Dijon Sauce:

  • 2 tbsp Dijon mustard
  • 2 tbsp mayonnaise
  • 1 garlic clove, minced
  • 1 tsp lemon juice
  • Pinch of salt & pepper

Optional Add-ins:

  • Spinach, caramelized onions, mushrooms

Instructions
 

  • Prepare Sauce Whisk Dijon mustard, mayonnaise, garlic, lemon juice, salt, and pepper until smooth. Chill until serving.
  • Assemble Quesadillas Lay tortillas flat. Spread shredded chicken, ham slices, and Swiss cheese evenly. Top with another tortilla for stability.
  • Cook Quesadillas Heat butter or oil in skillet over medium heat. Cook quesadillas 3–4 minutes per side until golden and cheese melts.
  • Serve Slice into wedges. Serve hot with Dijon sauce for dipping.
