Instructions
 

  • Sauté aromatics: Heat oil in a large pot. Add onion, celery, bell pepper, and garlic. Cook until softened and fragrant.

  • Combine proteins & beans: Add shredded chicken and white beans. Stir to combine.
  • Season: Sprinkle in Cajun seasoning, cumin, oregano, salt, and pepper. Mix well.
  • Add broth: Pour in chicken broth. Bring to a simmer.
  • Simmer: Cook for 20–30 minutes, stirring occasionally, until flavors meld and beans soften.
  • Add cream: Stir in cream or sour cream for richness. Adjust seasoning as needed.
  • Finish: Add lime juice and fresh herbs like cilantro or parsley.
