Ingredients
  

For the casserole:

  • 4 boneless, skinless chicken breasts or thighs
  • 2 cups Greek yogurt (or tzatziki)
  • 1 medium cucumber, grated and drained
  • 2–3 cloves garlic, minced or roasted
  • Juice of 1 lemon
  • 2 tbsp fresh dill, chopped
  • 1 tbsp olive oil
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1–2 medium tomatoes, chopped
  • Salt and pepper, to taste
  • Optional: ½ cup shredded cheese (mozzarella, feta, or Parmesan)

Instructions
 

  • Preheat oven: 375°F (190°C). Pat chicken dry and season lightly with salt and pepper.
  • Prepare tzatziki sauce: Mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, and a pinch of salt and pepper.
  • Chop vegetables: Dice bell pepper, zucchini, and tomatoes.
  • Layer casserole: Spread vegetables evenly in the baking dish. Place chicken on top.
  • Add sauce: Pour tzatziki mixture evenly over the chicken.
  • Add cheese (optional): Sprinkle shredded cheese on top if desired.
  • Bake: Cover with foil and bake 25–30 minutes. Remove foil during last 5–10 minutes to brown cheese.
  • Rest: Let casserole rest 5–10 minutes before serving.
