Ingredients
  

Base Ingredients:

  • ¼ cup tamari or soy sauce
  • 2 tbsp rice vinegar or apple cider vinegar
  • 2 tbsp maple syrup or honey
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 1 tbsp nutritional yeast (optional but recommended)
  • ½ tsp chili flakes or 1 tsp sriracha (adjust to taste)

Optional Add-ins:

  • 1 tsp miso paste
  • 1 tsp lime juice
  • ½ tsp tomato paste
  • 1 tsp sesame seeds

Instructions
 

Method 1: Blended (Raw)

  • Add all ingredients to a blender or food processor.
  • Blend until smooth.
  • Taste and adjust: more vinegar for tang, more syrup for sweetness, more chili for heat.
  • Let sit for 30 minutes before serving to allow flavors to meld.
  • Store in an airtight container in the fridge for up to 5 days.

Method 2: Simmered (Optional)

  • Sauté garlic and ginger in sesame oil until fragrant.
  • Add tamari, vinegar, sweetener, and spices.
  • Simmer gently for 5 minutes.
  • Cool and blend if desired for a smoother texture.
  • Store and use as above.

Notes

  • For a thicker sauce, add a cornstarch slurry and simmer until glossy.
  • Freeze leftovers in ice cube trays for quick single-use portions.
  • Avoid freezing if using fresh herbs or citrus—these can turn bitter.
