Ingredients
  

  • 1 cup chopped dates
  • 1 cup boiling water + ½ tsp baking soda
  • ½ cup unsalted butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1 ¼ cups all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • Toffee Sauce:
  • ½ cup unsalted butter
  • 1 cup brown sugar
  • 1 cup heavy cream
  • Pinch of salt

Instructions
 

  • Prepare Dates: Soak chopped dates in boiling water with baking soda. Let soften.
  • Make Sponge Batter: Cream butter and brown sugar until fluffy. Add eggs one at a time. Fold in flour, baking powder, salt, and softened dates with liquid.
  • Bake Sponge: Pour batter into greased baking dish or ramekins. Bake at 350°F (175°C) for 30–35 minutes until golden and springy. Test with a skewer.
  • Make Toffee Sauce: Melt butter in saucepan. Stir in brown sugar and cream. Simmer until glossy and thickened. Add pinch of salt.
  • Serve: Pour warm sauce over sponge. Garnish with whipped cream, custard, or vanilla ice cream.
