Equipment

  • Sharp knife
  • Spoon or small spatula
  • Microwave-safe bowl or double boiler
  • Parchment paper
  • Tray or plate for chilling

Ingredients

  • 12 Medjool dates (pitted)
  • ¼ cup peanut butter (or almond, cashew, sunflower butter)
  • ¼ cup chopped nuts (peanuts, almonds, pecans)
  • ½ cup dark chocolate chips (or milk/vegan chocolate)
  • 1 tsp coconut oil (optional, for smoother chocolate)
  • Flaky salt or shredded coconut (optional garnish)

Instructions

  • Prep Dates: Slice each Medjool date lengthwise and remove the pit, keeping the date intact like a pocket.
  • Stuff: Fill each date with about 1 tsp of nut butter. Press chopped nuts into the center for crunch.
  • Melt Chocolate: In a microwave-safe bowl, melt chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
  • Coat or Drizzle: Dip each stuffed date in melted chocolate or drizzle over the top. Place on parchment-lined tray.
  • Chill: Refrigerate for 30 minutes or freeze for 10 minutes until chocolate sets.
  • Serve: Enjoy chilled for best texture. Store leftovers in an airtight container in the fridge.

Notes

  • Vegan Option: Use dairy-free chocolate and plant-based nut butter.
  • Nut-Free Swap: Try sunflower seed butter and pumpkin seeds.
  • Flavor Boosts: Add shredded coconut, freeze-dried berries, or mascarpone for a cheesecake-style twist.
  • Storage: Keep in fridge up to 7 days or freeze for 2 months. Use parchment paper to prevent sticking.
  • Serving Tip: Present in mini cups or drizzle with white chocolate for a party-ready look.
