Equipment

  • Crock pot / slow cooker
  • Mixing bowls
  • Measuring cups & spoons
  • Forks (for shredding chicken)

Ingredients

  • 2 lbs boneless chicken breasts or thighs
  • 1 packet ranch seasoning mix
  • 1 can cream of chicken soup (10.5 oz)
  • 8 oz cream cheese (cubed)
  • ½ cup chicken broth
  • Fresh parsley or chives (for garnish)

Instructions

  • Place chicken in the bottom of the crock pot.
  • Sprinkle ranch seasoning over chicken.
  • Add cream of chicken soup, cream cheese, and chicken broth.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours.
  • Shred chicken with two forks and stir sauce until smooth.
  • Serve hot over rice, pasta, or mashed potatoes. Garnish with parsley.

Notes

  • Works with both chicken breasts (leaner) and thighs (juicier).
  • Resist lifting the lid—heat loss extends cooking time.
  • For extra flavor, sear chicken lightly before adding to the crock pot.
  • Sauce can be thickened with cornstarch slurry if needed.
  • Leftovers freeze well for up to 2 months.
