Ingredients

  • 2 cups crushed Ritz crackers

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • If needed, pound chicken breasts to an even thickness (~½ inch) and season lightly with salt and pepper.
  • Crush Ritz crackers until coarse crumbs form (use a rolling pin or food processor). Mix in any optional seasonings or Parmesan.
  • Dip each chicken piece in beaten egg (or mayonnaise), letting excess drip off.
  • Press chicken into the Ritz cracker crumbs, coating evenly and pressing gently to adhere.
  • Place coated chicken on prepared baking sheet. Drizzle or brush melted butter over each piece to promote browning and crispness.
  • Bake 20–25 minutes, flipping halfway, until crust is golden and chicken reaches an internal temperature of 165°F (74°C).
  • Let rest for 5 minutes before serving.
