Ingredients
  

  • 12–15 pickle slices or spears (dill, bread-and-butter, or spicy)
  • 6 oz cheese (cheddar, mozzarella, or pepper jack), cut into cubes or strips
  • ½ cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs or panko
  • Salt & pepper to taste
  • Optional: garlic powder, paprika, ranch seasoning

Instructions
 

  • Prepare pickles: Slice into rounds or use spears. Pat dry thoroughly with paper towels.
  • Stuff with cheese: Sandwich cheese between pickle rounds or wrap strips around spears.
  • Coat: Dredge in flour, dip in beaten eggs, then coat with breadcrumbs. Press crumbs firmly to stick.
  • Cook:
    Bake: Place on parchment-lined sheet, bake at 400°F (200°C) for 15–20 minutes until golden.
    Fry: Heat oil to 350°F (175°C), fry 2–3 minutes until crisp. Drain on paper towels.
    Air fry: Cook at 375°F (190°C) for 8–10 minutes, shaking halfway.
  • Serve: Enjoy hot with ranch, chipotle mayo, or spicy aioli.
