Ingredients
  

  • 3 medium russet or Yukon Gold potatoes
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • ½ cup finely grated parmesan cheese
  • Fresh parsley or thyme (for garnish)

Instructions
 

  • Prep Potatoes: Wash, peel if desired, and slice thinly (about ⅛ inch). Pat dry.
  • Arrange Lattice: On a parchment-lined baking sheet, overlap slices diagonally to form a crisscross lattice.
  • Season: Brush with olive oil, then sprinkle garlic powder, paprika, salt, and pepper.
  • Bake: Cook at 425°F (220°C) for 20–25 minutes until golden and crisp.
  • Add Parmesan: Sprinkle finely grated parmesan immediately after baking so it melts into the lattice.
  • Garnish: Top with fresh herbs and serve hot.
