Equipment

  • Cast iron or heavy-bottomed skillet (non-stick optional)
  • Fish spatula
  • Paper towels
  • Knife and cutting board
  • Measuring spoons
  • Splatter screen (optional)
  • Whisk (for batter or coatings)

Ingredients

  • 4 firm white fish fillets (cod, haddock, tilapia, basa)
  • Salt and black pepper, to taste
  • 1/4 cup all-purpose flour (or rice/almond flour for gluten-free)
  • Optional: 1/4 cup panko breadcrumbs, 1 tsp paprika, herbs or lemon zest for coating
  • 2 tbsp vegetable, canola, or grapeseed oil
  • 1–2 tbsp butter (optional, for basting)
  • Optional garnishes: lemon wedges, fresh parsley or dill

Instructions

  • Prep Fish: Pat fillets dry, season both sides with salt and pepper. Dredge lightly in flour or breadcrumb mixture if desired.
  • Heat Pan: Preheat skillet over medium-high heat. Add oil and let it get hot.
  • Cook Fillets: Place fillets in pan (skin-side down if applicable). Cook 3–5 minutes without moving. Flip carefully and cook another 2–4 minutes until opaque and flaky.
  • Optional Baste: Add butter and herbs, spoon over fillets during last minute for flavor and shine.
  • Serve: Plate immediately with lemon wedges, fresh herbs, and your choice of sides or sauces.

Notes

  • Gluten-Free Option: Use rice flour, almond flour, or gluten-free breadcrumbs.
  • Flavor Variations: Add herbs, garlic, paprika, lemon zest, or spice blends to coating.
  • Tips for Crispiness: Pat fish dry, preheat pan, and avoid overcrowding. Flip only once.
  • Serving Suggestions: Pair with roasted or mashed potatoes, steamed vegetables, rice, or light salads. Add tartar sauce, lemon-butter sauce, or herb vinaigrette.
  • Make Ahead: Fish is best cooked fresh. Prep fillets and coatings in advance, but cook just before serving.
