Ingredients
  

  • 2 large sweet onions, sliced into ½-inch rings
  • 2 eggs, whisked (or flax egg for vegan option)
  • 1 cup almond flour (or crushed pork rinds)
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Oil for frying (avocado or olive oil)

Instructions
 

  • Slice onions: Peel and cut onions into rings, separating carefully.
  • Prepare coating: In one bowl, whisk eggs. In another, mix almond flour, Parmesan, garlic powder, paprika, salt, and pepper.
  • Dip & coat: Dip onion rings into egg wash, then flour mixture. Repeat for a double coating.
  • Cook:
    Frying: Heat oil to 350°F (175°C). Fry rings in small batches for 2–3 minutes per side until golden.
    Air Frying: Spray rings lightly with oil. Cook at 375°F (190°C) for 10–12 minutes, flipping halfway.
  • Drain & serve: Place on paper towels to remove excess oil. Serve hot with keto-friendly dips like ranch or chipotle mayo.

  • Use sweet onions for a milder flavor.
