  • Brush (for garlic butter)

Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts (cut into 4 thin cutlets)
  • ½ cup flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • Salt & pepper to taste
  • Optional: ½ cup buttermilk (for marinating)

For the Sandwich:

  • 4 sandwich rolls (ciabatta, brioche, or baguette)
  • 2 tbsp garlic butter or garlic salt
  • 1 cup chopped romaine lettuce
  • ½ cup Caesar dressing (store-bought or homemade)
  • ½ cup shredded or shaved Parmesan cheese
  • Optional: lemon wedges, red onion slices

Instructions

  • Prep the Chicken Pound chicken cutlets to even thickness. Season with salt and pepper. (Optional: marinate in buttermilk for 30 minutes.)
  • Bread the Chicken Dredge each cutlet in flour, dip in beaten eggs, then coat with panko breadcrumbs.
  • Cook the Chicken
Pan-Fry: Heat oil in a skillet over medium heat. Cook cutlets 3–4 minutes per side until golden and cooked through.
Air-Fry: Spray with oil and cook at 375°F (190°C) for 12–15 minutes, flipping halfway.
Oven-Bake: Bake at 400°F (200°C) for 20–25 minutes until crispy.
  • Toast the Bread Slice rolls and brush with garlic butter or sprinkle with garlic salt. Toast in a skillet or oven until golden.
  • Make the Salad Toss chopped romaine with Caesar dressing and Parmesan.
  • Assemble the Sandwiches Layer crispy chicken, Caesar salad, and extra dressing inside toasted bread. Add red onion or lemon wedge if desired.
  • Serve Serve warm with sweet potato fries, chips, or a light soup.

Notes

  • Storage: Store chicken, salad, and bread separately. Reheat chicken in oven or air fryer for best texture.
  • Make Ahead: Bread and cook chicken in advance; assemble fresh before serving.
  • Variations: Use grilled chicken for a lighter version, swap romaine for kale, or add bacon or avocado.
  • Vegetarian Option: Replace chicken with crispy tofu or cauliflower cutlets.
  • Kid-Friendly: Skip anchovies and use mild Caesar dressing.
