Ingredients

Chicken:

  • 2 boneless, skinless chicken breasts or thighs
  • Salt & pepper, to taste
  • Optional: garlic powder, paprika

Bacon:

  • 8 slices of bacon (or turkey bacon for a leaner option)

Ranch Dressing:

  • 4 slices sharp cheddar cheese (or preferred melting cheese)

Bread

  • 8 slices of sourdough or brioche bread

Optional Toppings:

  • Lettuce, tomato, pickles, jalapeños, avocado

Instructions

  • Cook Bacon: Fry bacon in a skillet until crispy. Drain on paper towels and set aside.
  • Cook Chicken: Season chicken with salt, pepper, and optional spices. Cook in skillet over medium heat until golden and cooked through. Slice thinly.
  • Assemble Sandwich: Spread ranch dressing on bread slices. Layer chicken, bacon, and cheese. Add optional toppings. Close sandwich.
  • Grill Melt: Heat skillet or griddle over medium heat. Grill sandwiches, pressing lightly, until bread is golden and cheese is melted (3–4 minutes per side).
  • Serve: Slice in half and serve immediately with desired sides.

Notes

  • Ingredient Substitutions: Turkey bacon for leaner option; pepper jack or gouda cheese for flavor variation.
  • Low-Carb Option: Use lettuce wraps or cloud bread instead of regular bread.
  • Make-Ahead Tips: Pre-cook chicken and bacon; assemble sandwiches just before grilling.
  • Storage: Refrigerate cooked chicken and bacon separately for up to 2 days; reheat in a skillet.
  • Freezing: Freeze individual components, not assembled sandwiches, for best texture.
  • Flavor Twists: Add jalapeños, BBQ sauce, or pickled onions for variety.
