Equipment

  • Large skillet or sauté pan
  • Tongs
  • Wooden spoon
  • Measuring Cups and Spoons
  • Cutting board and knife

Ingredients

  • Chicken breasts (boneless, skinless)
  • Olive oil
  • Garlic cloves, minced
  • Heavy cream (or half-and-half for lighter version)
  • Chicken broth or white wine
  • Parmesan cheese, grated
  • Sun-dried tomatoes
  • Fresh spinach
  • Salt, pepper, Italian seasoning
  • Optional: fresh basil or parsley for garnish

Instructions

  • Season & Sear Chicken: Pat chicken dry, season with salt and pepper, and sear in olive oil until golden. Remove and set aside.
  • Build Sauce Base: In the same pan, sauté garlic until fragrant. Deglaze with broth or white wine.
  • Add Cream & Cheese: Stir in heavy cream and Parmesan. Simmer until slightly thickened.
  • Incorporate Vegetables: Add sun-dried tomatoes and spinach. Stir until spinach wilts.
  • Return Chicken: Nestle chicken back into the sauce. Simmer until cooked through.
  • Serve: Garnish with fresh basil or parsley. Serve hot over pasta, rice, or mashed potatoes.
  • Expert Tip: Don’t rush the simmer—allowing the sauce to thicken naturally creates the perfect creamy consistency.

Notes

  • Chicken thighs can be used for extra juiciness.
  • Deglaze pan with white wine for added depth.
  • Add mushrooms or zucchini for more vegetables.
  • For lighter versions, substitute half-and-half or Greek yogurt for cream.
  • Store leftovers in the fridge for 3–4 days; reheat gently on stovetop.
  • Freeze portions for up to 2 months; thaw and reheat slowly to prevent sauce separation.
