  • 2 boneless chicken breasts
  • Salt & pepper to taste
  • Pinch of chili flakes (optional)

Instructions
 

  • Cook Pasta: Boil pasta in salted water until al dente. Reserve ½ cup pasta water before draining.
  • Prepare Chicken: Season chicken with salt and pepper. Pan-sear in olive oil until golden and cooked through. Slice into strips.
  • Build Sauce: In skillet, sauté garlic and shallot in olive oil. Stir in ricotta, Parmesan, lemon zest, and reserved pasta water until creamy. Add cherry tomatoes if using.
  • Combine: Toss pasta directly into sauce. Add chicken strips and fresh herbs. Mix until evenly coated.
  • Serve: Garnish with chili flakes or extra Parmesan. Serve hot with garlic bread or roasted vegetables.
