Ingredients
  

  • 2 cups mixed mushrooms (cremini, shiitake, oyster)
  • 2 tbsp olive oil or butter
  • 2 garlic cloves, minced
  • ½ cup heavy cream (or 2 tbsp butter)
  • 1 tsp fresh thyme (optional)
  • Salt & pepper to taste
  • 4 slices rustic bread (sourdough or country loaf)
  • Fresh parsley or chives for garnish
  • Optional: splash of lemon juice or white wine

Instructions
 

  • Prepare Mushrooms: Clean and slice mushrooms.
  • Sauté: Heat oil or butter in skillet. Add mushrooms in a single layer. Cook 5–7 minutes until golden.
  • Add Aromatics: Stir in garlic and thyme. Season with salt and pepper. Cook 1–2 minutes.
  • Make Sauce: Reduce heat. Add cream or butter, stirring until mushrooms are coated in velvety sauce. Optional: add splash of lemon juice or wine.
  • Toast Bread: Toast bread until golden and crisp.
  • Assemble: Spoon creamy mushrooms over toast. Garnish with parsley or chives. Serve immediately.

Notes

  • Don’t overcrowd pan—mushrooms need space to brown.
  •  Add cream only after mushrooms are browned to avoid curdling.
  •  Use sturdy bread like sourdough to prevent sogginess.
