- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 tbsp butter (divided)

- 1 lemon (zest + juice)
- ½ cup freshly grated Parmesan cheese
- Salt & black pepper, to taste

- 2 tbsp fresh parsley, chopped (for garnish)
Cook pasta: Bring a pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
