Equipment

  • Large soup pot
  • Wooden spoon
  • Knife + cutting board
  • Measuring cups
  • Ladle

Ingredients

  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 6 cups chicken or vegetable broth
  • 1 package (12–16 pierogi, potato or cheese-filled)
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh dill, chopped
  • Optional toppings: sour cream, crispy bacon, chives

Instructions

  • Sauté aromatics: Melt butter in a large pot. Add onion and garlic, cooking until fragrant.
  • Add broth: Pour in chicken or vegetable stock. Bring to a gentle simmer.
  • Cook pierogi: Add pierogi directly into simmering broth. Cook 8–10 minutes until tender.
  • Make it creamy: Reduce heat. Stir in heavy cream slowly, mixing well. Avoid boiling.
  • Season: Add salt and pepper. Taste and adjust.
  • Finish with dill: Stir in fresh dill just before serving.
  • Serve: Ladle into bowls. Garnish with sour cream, bacon, or chives if desired.

Notes

  • For best flavor: Add dill at the end to preserve freshness.
  • Make-ahead: Store broth and pierogi separately; combine when reheating.
  • Variations: Try mushroom pierogi for vegetarian, add paprika for spice, or use cashew cream for vegan.
  • Tip: Avoid boiling after adding cream to prevent curdling.
