Equipment

  • Mixing bowls
  • Sharp chef’s knife
  • Cutting board
  • Measuring spoons
  • Salad serving bowl or airtight container

Ingredients

  • 2 medium cucumbers (English or Persian), thinly sliced
  • 2 cups cherry or grape tomatoes, halved
  • ½ cup sour cream or Greek yogurt (can substitute mayonnaise)
  • 1 tbsp lemon juice or apple cider vinegar
  • 2 tbsp fresh dill or parsley, chopped
  • 1 garlic clove, minced (optional)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • 1 tsp sugar or honey (optional, to balance acidity)
  • Optional mix-ins: ¼ cup crumbled feta, sliced olives, diced red onion, diced avocado, chopped nuts

Instructions

  • Prepare Vegetables: Wash cucumbers and tomatoes thoroughly. Slice cucumbers thinly and halve tomatoes evenly for consistent bite.
  • Make Dressing: In a mixing bowl, whisk together sour cream (or yogurt/mayo), lemon juice or vinegar, minced garlic, salt, pepper, and sugar or honey until smooth. Adjust seasoning to taste.
  • Combine Salad: Gently toss cucumbers and tomatoes with the creamy dressing, ensuring all pieces are coated but not smashed.
  • Add Herbs and Mix-ins: Fold in chopped dill or parsley and any optional add-ins like feta or olives for extra flavor and texture.
  • Chill or Serve: For best flavor, refrigerate salad for 15–30 minutes before serving to let flavors meld. Can be served immediately if preferred crisp and fresh.
  • Garnish & Serve: Optionally garnish with additional herbs or a sprinkle of black pepper before serving. Pair with grilled meats, sandwiches, or enjoy as a light snack.

Notes

  • Avoid Watery Salad: Salt cucumbers and let them drain briefly to remove excess moisture before mixing.
  • Dressing Variations: Substitute sour cream with Greek yogurt for a lighter option or mayonnaise for richer flavor. Use plant-based alternatives for vegan versions.
  • Customize: Add herbs like basil or oregano, and try seasonal veggies like bell peppers or radishes for different twists.
  • Storage: Keeps well refrigerated for up to 3 days; add dressing just before serving if prepping ahead.
  • Serving Tip: Let salad sit at room temperature for 10 minutes before serving to enhance flavors.
