Instructions
 

  • Sear the Chicken: Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear until golden brown (3–4 minutes per side). Remove and set aside.
  • Sauté Aromatics: In the same pan, add onions and cook until translucent. Add garlic and mushrooms, sauté until mushrooms are browned and moisture evaporates (6–8 minutes).
  • Deglaze: Pour in chicken broth, scraping up browned bits. Simmer for 2 minutes.
  • Make the Sauce: Lower heat. Stir in Dijon mustard and sour cream until smooth.
  • Simmer: Return chicken to the pan. Simmer gently for 5–10 minutes until chicken is cooked through and sauce thickens.
  • Serve: Spoon over noodles, rice, or mashed potatoes. Garnish with parsley or paprika.
