Ingredients
  

  • 1 lb steak (sirloin or ribeye, thinly sliced)
  • 1 tbsp olive oil
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 1 package (20 oz) cheese tortellini
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1 ½ cups provolone cheese, freshly grated
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • Garnish: fresh parsley, extra provolone

Instructions
 

  • Cook steak & veggies: Heat olive oil in skillet. Sear steak until browned, remove. In same pan, sauté onions and peppers until caramelized.
  • Cook tortellini: Boil in salted water until al dente. Drain and set aside.
  • Make provolone sauce: Melt butter in saucepan, whisk in flour to form roux. Slowly add milk, whisking until thickened. Stir in provolone, garlic powder, salt, and pepper until smooth.
  • Combine: Toss tortellini, steak, and veggies in sauce until evenly coated.
  • Serve: Garnish with parsley or extra provolone.
