Ingredients
  

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tbsp Cajun seasoning (store-bought or homemade)
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 bell pepper, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 cups cooked rice (white, brown, or jasmine)
  • Optional: ¼ cup grated Parmesan, chopped parsley or scallions for garnish

Instructions
 

  • Season chicken with Cajun seasoning and let sit for 5 minutes.
  • Sear chicken in hot skillet with oil until golden brown (4–5 minutes per side). Remove and set aside.
  • Sauté garlic, onion, and bell pepper in the same skillet until softened.
  • Add broth and cream, stir, and simmer for 5–7 minutes until slightly thickened.
  • Return chicken to skillet, cover, and cook for 8–10 minutes until fully cooked.
  • Stir in cooked rice or serve rice separately under chicken.
  • Garnish with Parmesan, parsley, or scallions. Serve hot.
