Ingredients
  

  • 12 oz spaghetti or linguine
  • 2 cups cabbage, thinly sliced
  • 4 oz pancetta or bacon, diced
  • 2 large egg yolks + 1 whole egg
  • 1 cup grated Parmesan or Pecorino Romano cheese
  • 2 tbsp olive oil
  • Freshly ground black pepper
  • Salt, to taste

Instructions
 

  • Prepare cabbage: Thinly slice cabbage. Sauté in olive oil until tender but still crisp. Set aside.
  • Cook pancetta: In a skillet, cook pancetta until crisp. Remove and reserve rendered fat.
  • Cook pasta: Boil pasta in salted water until al dente. Reserve 1 cup of pasta water before draining.
  • Whisk eggs and cheese: In a bowl, whisk egg yolks, whole egg, and grated cheese until smooth.
  • Combine ingredients: Add hot pasta to skillet with pancetta and cabbage. Remove from heat. Quickly stir in egg mixture, tossing to coat. Add reserved pasta water gradually until sauce is creamy.
  • Finish: Garnish with black pepper and extra Parmesan. Serve immediately.

  • Use guanciale for authentic flavor, or bacon for convenience.
  • Whole wheat pasta adds fiber and nuttiness.
  • For a lighter version, reduce cheese and pancetta, and add extra cabbage.
