Ingredients
  

  • ½ lb fresh crab meat (picked clean)
  • ½ lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1 ½ cups shredded cheese (cheddar or Monterey Jack)
  • ½ tsp paprika
  • ½ tsp chili powder
  • 6 large flour tortillas (or puff pastry sheets)
  • Fresh parsley or cilantro for garnish

Instructions
 

  • Prep Seafood: Clean crab meat and lightly cook shrimp in olive oil with garlic until just pink. Set aside.
  • Make Queso Sauce: Melt butter in saucepan, whisk in flour to form a roux. Gradually add milk, whisking until smooth. Stir in cheese, paprika, and chili powder until creamy.
  • Assemble Rollos: Lay tortillas flat. Spoon queso sauce, crab, and shrimp into the center. Roll tightly and place seam-side down in baking dish.
  • Bake: Bake at 375°F (190°C) for 20–25 minutes until golden brown.
  • Serve: Slice rollos and serve hot with salsa or dipping sauce. Garnish with parsley or cilantro.
