Equipment

  • Blender or food processor
  • Mixing bowls
  • Whisk
  • Serving dish or trifle bowl
  • Plastic wrap (for chilling)

Ingredients

  • 2 cups cottage cheese (blended until smooth)
  • 1 package sugar-free vanilla or banana pudding mix
  • 1–2 tbsp honey or maple syrup (optional, for sweetness)
  • 3–4 ripe bananas, sliced
  • 1 cup milk (dairy or almond milk)
  • 1 cup whipped cream (optional, for topping)
  • 1 cup vanilla wafers (optional; use keto/low-carb cookies if preferred)
  • ¼ cup chopped nuts (optional garnish)

Instructions

  • Blend cottage cheese: Process cottage cheese until smooth and creamy.
  • Prepare pudding base: In a bowl, whisk pudding mix with milk. Fold in blended cottage cheese and sweetener.
  • Layer: Place banana slices at the bottom of a serving dish. Add pudding mixture, then wafers (if using). Repeat layers until dish is filled.
  • Chill: Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow flavors to meld.
  • Serve: Top with whipped cream, nuts, or extra banana slices. Spoon into bowls or cups and enjoy chilled.

Notes

  • Banana tip: Use bananas with light brown speckles for best flavor and texture.
  • Cottage cheese: Blend thoroughly for smooth consistency; small curd works best.
  • Sweetener: Adjust honey or maple syrup to taste, or use sugar-free alternatives for keto-friendly versions.
  • Storage: Refrigerate up to 3 days; freezing not recommended due to texture changes.
  • Serving suggestion: Present in trifle bowls or individual cups for parties. Garnish with cinnamon, nuts, or fresh fruit for elegance.
