Ingredients

  • Powdered sugar

Instructions
 

  • Prepare the Cookie Dough: Cream butter and sugars until fluffy. Add eggs and vanilla, mix well. Combine dry ingredients and mix until just incorporated. Chill dough for 30 minutes.
  • Bake Cookies: Preheat oven to 350°F (175°C). Scoop dough onto lined baking sheets. Bake 12–15 minutes until edges are golden and centers are soft. Cool completely on racks.
  • Prepare Filling: Beat softened butter or cream cheese with powdered sugar and vanilla until smooth and spreadable. Adjust consistency as needed.
  • Assemble Cookies: Spread or pipe filling onto the flat side of half the cookies. Top with remaining cookies and press gently to sandwich. Chill 30 minutes to set.
  • Store: Keep in airtight container at room temperature or refrigerated.
