Ingredients
  

Cookie Dough

  • 1 cup heat-treated all-purpose flour
  • ½ cup unsalted butter, softened
  • ½ cup packed brown sugar
  • 1 tsp vanilla extract
  • 2–3 tbsp milk or cream
  • ½ cup mini chocolate chips
  • ¼ tsp salt

Assembly & Coating

  • 48 mini pretzels (square snaps or round)
  • 1½ cups semi-sweet or milk chocolate, for melting

Instructions
 

Step 1: Heat-Treat the Flour

  • Microwave flour in 30-second intervals, stirring each time, until it reaches 165°F (74°C). Let cool completely.

Step 2: Make the Edible Cookie Dough

  • Cream softened butter and brown sugar until smooth. Add vanilla and milk, mixing until combined. Stir in cooled flour, salt, and fold in mini chocolate chips. Adjust consistency with milk if needed.

Step 3: Shape the Bites

  • Roll dough into 1-tsp balls. Place one ball between two pretzels and gently press to form a sandwich.

Step 4: Chill

  • Place sandwiches on a parchment-lined baking sheet and refrigerate for 20–30 minutes to firm up.

Step 5: Dip in Chocolate

  • Melt chocolate slowly in microwave or double boiler. Dip each sandwich halfway or fully into chocolate. Allow excess to drip off and place back on parchment.

Step 6: Decorate & Set

  • Add optional sprinkles, white chocolate drizzle, or flaky sea salt. Chill until chocolate hardens.

  • Use heat-treated flour and skip raw eggs for safety.
  • Keep dough slightly firm to simplify assembly.
  • Melt chocolate slowly to avoid thick or clumpy coating.
  • Store in an airtight container in the fridge for up to 5 days.
  • Freeze for up to 2 months; thaw briefly before serving.
