- 1 medium onion, diced
- 2 celery stalks, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 8 oz fresh mushrooms (cremini or button), sliced
- 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 6 cups chicken bone broth (or regular broth)
- 1 bay leaf
- 1 tsp dried thyme
- Salt & pepper to taste
- Fresh parsley for garnish
Sauté Aromatics: Heat olive oil in pot over medium heat. Add onion, celery, carrot, and garlic. Cook until softened, about 5 minutes.
