Ingredients
  

  • 2 lb potatoes (Yukon Gold or Russet)
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 12 oz sausage (bratwurst, kielbasa, or smoked sausage), sliced
  • 6 cups chicken or vegetable broth
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 tsp thyme or marjoram
  • Salt & pepper, to taste
  • ½ cup cream or milk (optional)
  • Optional: 1 leek, sliced; 4 oz bacon, cooked & crumbled
  • Garnish: fresh parsley or crispy bacon

Instructions
 

  • Prepare Ingredients: Peel and chop potatoes; dice onion, carrots, celery; slice sausage.
  • Cook Sausage: Brown sausage in pot, remove, and set aside.
  • Sauté Vegetables: In same pot, cook onion, carrots, celery until softened. Add garlic.
  • Add Potatoes & Broth: Stir in potatoes, pour broth, add bay leaves and herbs. Simmer 20–25 minutes until potatoes are tender.
  • Blend (Optional): Mash or blend part of the soup for creaminess, leaving chunks for texture.
  • Add Sausage Back: Return sausage, simmer 5 minutes.
  • Season: Adjust salt, pepper, and herbs.
  • Finish with Cream (Optional): Stir in cream for richness.
  • Garnish & Serve: Top with parsley or bacon. Serve hot with crusty bread.
