Ingredients
  

  • 1 scoop vanilla or cinnamon protein powder
  • 2 large eggs
  • ½ cup milk (dairy or almond)
  • ¼ cup flour (or oat flour for healthier option)
  • 1 tsp cinnamon
  • Pinch of salt
  • Cooking spray or butter for pan
  • Optional glaze: Greek yogurt, cream cheese, or powdered sugar mixed with milk

Instructions
 

  • Mix Batter: Whisk protein powder, eggs, milk, flour, cinnamon, and salt until smooth. Batter should be thin and pourable.
  • Cook Crepes: Heat a non-stick skillet over medium heat. Lightly grease. Pour a small amount of batter, swirling to coat pan. Cook until edges lift, then flip carefully.
  • Prepare Filling: Mix cinnamon with a touch of sweetener or sugar substitute. Spread lightly inside each crepe.
  • Roll & Glaze: Roll crepes and drizzle with glaze. Garnish with fruit or a sprinkle of cinnamon.
  • Serve Warm: Plate individually or stack for a “cinnamon roll crepe cake.”
