Ingredients
  

  • 8 oz high-quality bittersweet or semi-sweet chocolate, finely chopped
  • ½ cup heavy cream
  • 2 tbsp unsalted butter
  • Cocoa powder, chopped nuts, or melted chocolate for coating

Instructions
 

  • Heat Cream & Butter: Warm cream and butter in a saucepan until just simmering.
  • Make Ganache: Pour hot cream mixture over chopped chocolate in a heatproof bowl. Let sit 2 minutes, then stir until smooth.
  • Chill Ganache: Cover and refrigerate for 1–2 hours until firm.
  • Shape Truffles: Scoop small portions and roll into balls with hands or gloves.
  • Coat Truffles: Roll in cocoa powder, nuts, or dip in melted tempered chocolate.
  • Serve or Store: Place on parchment-lined tray. Store in airtight container in fridge up to 1 week.
