Ingredients
  

For the crust

  • 1 ½ cups graham cracker crumbs or chocolate cookie crumbs
  • 5 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar

For the peanut butter filling

  • 1 cup creamy peanut butter
  • 4 oz cream cheese, softened (or mascarpone)
  • ¾ cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

For the chocolate ganache

  • 8 oz high-quality dark or semi-sweet chocolate, chopped
  • ¾ cup heavy cream
  • 1 tsp vanilla extract (optional)
  • ½ tsp espresso powder (optional)

For garnish (optional)

  • Sea salt flakes
  • Chopped peanuts or chocolate shavings

Instructions
 

  • Prepare crust: Combine crumbs, melted butter, and sugar. Press firmly into a 9-inch pie dish. Chill or blind bake if desired, then cool.
  • Make peanut butter filling: Beat peanut butter, cream cheese, powdered sugar, vanilla, and salt until smooth. Chill while preparing ganache.
  • Prepare ganache: Heat cream until just simmering. Pour over chopped chocolate. Let sit 2 minutes, then stir until smooth. Add vanilla and espresso powder if using.
  • Assemble pie: Spoon half the peanut butter filling into crust. Dollop half the ganache on top. Repeat layers. Use a skewer to swirl gently.
  • Chill: Cover and refrigerate at least 4 hours or overnight to set.
  • Serve: Sprinkle with sea salt flakes and garnish if desired. Slice with a warm knife.
