Ingredients
  

  • 1 lb chicken breasts or thighs
  • ½ cup ranch dressing
  • 2 chipotle peppers in adobo, minced
  • 2 cups cooked rice (white or brown)
  • 1½ cups black beans, seasoned
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup shredded lettuce
  • 1 tomato, diced
  • ½ red onion, sliced
  • Olive oil for grilling

Instructions
 

  • Marinate chicken: Mix ranch dressing with minced chipotle peppers. Coat chicken and marinate for at least 30 minutes.
  • Grill chicken: Heat grill or grill pan over medium-high. Cook chicken 6–7 minutes per side until charred and juicy. Slice into strips.
  • Prepare rice & beans: Cook rice until fluffy. Warm beans with a pinch of cumin and garlic.
  • Warm tortillas: Heat tortillas briefly on the grill or in a skillet to make them pliable.
  • Assemble burritos: Layer rice, beans, grilled chicken, cheese, lettuce, tomato, and onion. Drizzle with chipotle ranch.
  • Wrap burrito: Fold sides inward, then roll tightly from the bottom up.
  • Serve: Slice in half if desired. Serve with extra chipotle ranch or salsa.
