Ingredients
  

  • 12 oz elbow macaroni (or rotini/penne)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 6 hot dogs (beef, turkey, or plant-based), sliced
  • 2 cups thick chili (homemade, canned, or leftover)
  • 2½ cups shredded cheese (cheddar, Monterey Jack, or blend)
  • Optional: diced jalapeños, crushed tortilla chips, sour cream, green onions

Instructions
 

  • Boil the Pasta Cook pasta in salted water until al dente. Drain and set aside.
  • Sauté Onions and Hot Dogs In a skillet, heat olive oil over medium heat. Add diced onion and cook until soft. Stir in sliced hot dogs and sauté until lightly browned.
  • Mix the Base In a large bowl, combine cooked pasta, sautéed onion and hot dogs, chili, and 1½ cups shredded cheese. Mix until evenly coated.
  • Layer and Top Grease a 9x13-inch baking dish. Spread mixture evenly. Top with remaining 1 cup cheese and optional jalapeños or crushed chips.
  • Bake Bake at 375°F (190°C) for 25–30 minutes, until bubbly and golden.
