- 6 bone-in chicken thighs (skin-on preferred)
- 1 lb Italian sausage (mild or spicy), sliced
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 4 garlic cloves, minced
- ½ cup white wine
- ¼ cup red wine vinegar
- ½ cup chicken stock
- 6–8 pickled cherry peppers, halved
- 1 tsp dried oregano
- Salt & pepper to taste
- Fresh parsley for garnish
Sear Chicken: Season chicken with salt and pepper. Heat olive oil in skillet and sear chicken until golden brown. Remove and set aside.
Brown Sausage: Add sausage slices to skillet. Cook until browned. Remove and set aside with chicken.
Sauté Vegetables: In same pan, sauté peppers, onion, and garlic until softened.
Deglaze Pan: Pour in white wine and vinegar, scraping up browned bits. Add chicken stock and oregano.
Simmer: Return chicken and sausage to skillet. Add cherry peppers. Cover and simmer 25–30 minutes until chicken is cooked through.
Finish & Serve: Garnish with parsley. Serve hot with crusty bread, polenta, or roasted potatoes.
