Ingredients
  

  • 6 bone-in chicken thighs (skin-on preferred)
  • 1 lb Italian sausage (mild or spicy), sliced
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 4 garlic cloves, minced
  • ½ cup white wine
  • ¼ cup red wine vinegar
  • ½ cup chicken stock
  • 6–8 pickled cherry peppers, halved
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Sear Chicken: Season chicken with salt and pepper. Heat olive oil in skillet and sear chicken until golden brown. Remove and set aside.
  • Brown Sausage: Add sausage slices to skillet. Cook until browned. Remove and set aside with chicken.
  • Sauté Vegetables: In same pan, sauté peppers, onion, and garlic until softened.
  • Deglaze Pan: Pour in white wine and vinegar, scraping up browned bits. Add chicken stock and oregano.
  • Simmer: Return chicken and sausage to skillet. Add cherry peppers. Cover and simmer 25–30 minutes until chicken is cooked through.
  • Finish & Serve: Garnish with parsley. Serve hot with crusty bread, polenta, or roasted potatoes.

Notes

  • Use bone-in chicken thighs for maximum flavor.
  •  Add vinegar during deglazing, not at the start, to avoid harshness.
  •  Balance sauce with a knob of butter at the end for silkiness.
  •  Adjust cherry peppers to control spice level.
  •  Serve family-style for authenticity.
