Equipment

  • Grill pan or skillet (or outdoor grill)
  • Cutting board & knife
  • Mixing bowls
  • Tongs
  • Salad spinner (for drying romaine)
  • Measuring spoons/cups
  • Optional: food processor or blender (if making dressing from scratch)

Ingredients

For the Wraps:

  • 2 cups cooked chicken (grilled, roasted, or rotisserie), sliced or chopped
  • 4 large burrito-size tortillas (or spinach, low-carb, or gluten-free wraps)
  • 2 cups chopped romaine lettuce (or kale/arugula/mixed greens)
  • ¼ cup shredded or shaved Parmesan cheese
  • ¼ cup Caesar dressing (store-bought or homemade)
  • Salt and pepper to taste
  • Optional add-ins: cherry tomatoes, red onion, crumbled bacon, quinoa, avocado, chickpeas, or grilled tofu

Optional Homemade Caesar Dressing:

  • ½ cup mayonnaise or Greek yogurt
  • 1 tbsp lemon juice
  • 1–2 tsp Dijon mustard
  • 1–2 garlic cloves, minced
  • 1–2 anchovy fillets or 1 tsp anchovy paste (optional)
  • 2 tbsp grated Parmesan
  • Salt and pepper, to taste
  • Water to thin, if needed

Instructions

Prepare the Chicken:

  • Season and grill chicken breast or thighs with salt, pepper, garlic powder, and a squeeze of lemon. Let rest and slice thinly or chop into bite-size pieces.

Prep the Greens:

  • Wash and thoroughly dry the romaine lettuce (or greens of choice) using a salad spinner or kitchen towel.

Make (or Mix) the Caesar Dressing:

  • If using homemade, combine dressing ingredients in a food processor or bowl until smooth. If using store-bought, give it a good stir and adjust seasoning if needed.

Assemble the Wraps:

  • Warm tortillas slightly for easier folding. Lay each wrap flat, spread Caesar dressing over the center, then layer with lettuce, chicken, Parmesan, and any optional add-ins.

Wrap & Serve:

  • Fold in the sides and roll tightly. Slice in half and serve immediately or wrap in foil/plastic wrap for storage.

Notes

  • Meal prep tip: Wraps can be made in advance and stored in the fridge for up to 3 days. Keep lettuce and dressing separate until ready to eat to prevent sogginess.
  • Gluten-free option: Use gluten-free tortillas or lettuce leaves for a low-carb Caesar wrap.
  • Vegetarian idea: Swap chicken for grilled tofu or chickpeas tossed in dressing.
  • Storage: Wrap tightly in foil or store in an airtight container. Do not freeze.
